I told you I experimented with making pulled pork last night and it worked! I know a lot of you cannot eat meat today, but it's an all-day crock pot recipe, so maybe you could get it ready today and try it tomorrow if you're looking for something new! I'll post that at the end of the blog.
In the meantime, we'll discuss weather. The boring weather pattern continues although it is quite unsettled. We're just not going to see a whole lot of rain. We woke up to a damp ground this morning with a couple light showers overnight. We'll see a mix of sun and clouds today, light showers very early Thursday, then a better chance of steadier rain on Friday. So...active, but not bad.
As for temperatures, it's going to feel like early to mid April today! No wonder we have Spring fever! After we lose the morning clouds, the early afternoon sunshine and strong southwest wind will warm us into the mid 50s. Upper 50s are even possible if the sun makes an appearance a little earlier. Thursday and Friday will still be in the upper 40s to lower 50s before it cools back down this weekend. Saturday and Sunday will be partly to mostly cloudy, breezy, and cooler in the upper 30s. Sure that's much colder, but also much more seasonable. It looks like it'll stay seasonable heading into next week. A few light snow showers are possible late Monday, but turns to rain Tuesday.

Crockpot Pulled Pork
3lb pork butt
3TB brown sugar
1TB dry mustard powder
1TB chili powder
1TB garlic powder
1/2TB pepper
2TB salt
1 cup water
1 medium onion, chopped into large cubes
2TB canola oil
Your favorite BBQ sauce (I like Sweet Baby Rays)
Mix the dry ingredients together, then rub all over the pork. Wrap in plastic and let rest in the fridge for at least an hour. Throw the roughly chopped onion in the bottom of a crock pot. Heat up the oil in a pan. Sear off the pork on ALL sides...about a minute on each side. Remove the meat and place on top of the onions in the crock pot. Pour a cup of water into the hot pan and scrape off all the burnt bits. Bring to a boil, then pour that over the meat. Add more water to the crock pot to come half way up the meat. Cook on low for 10-12 hours.
Carefully remove the meat from the crockpot, then shred with 2 forks. Strain what's left in the pot and reserve all the liquid. After the liquid sits for a bit, try to remove as much of the fat off the top as you can. In a sauce pan, pour in some of the liquid (about 1/2 cup), then add in BBQ sauce and stir to combine over low heat. Here's where it's up to you...play around with the liquid/BBQ sauce combo to get the flavor you want. I personally don't prefer too much BBQ sauce flavor. Place the shredded meat in a pot, gradually stir in some of the sauce you created. Do it in small batches to get the pulled pork the consistency you want. Heat to combine all the flavors. I put it on mini potato rolls. Enjoy!!

That's more like it. Sunshine all over the place. That dry air does have a crisp feel to it & will set us up for a cool Friday morning. Check out the forecasted low temps:

It was cloudy and rainy all day yesterday...perfect for napping, sleeping, laziness. Then just as I'm about to go to bed an hour earlier than usual, the sun was nice and bright and defeated my whole plan to get some extra sleep. Bosco being a spaz didn't help much either.

Took all day, but the sun finally made an appearance this afternoon. That's after 2+ inches of rain clobbered parts of Southeast Mass. last night.

I was lucky enough to go to the Sox game yesterday and man, that field can really handle some water! It was raining pretty hard for most of the game and everyone around us kept saying: "I'm sure they'll call it after this inning," "How many innings do you need to get in to make it count?" "If they weren't going out of town tomorrow, maybe they'll do a double header tomorrow," "Could have ordered a Bud heavy and let the rain water it down!" "I'm soaking wet." You get the idea...
